MERRY CHRISTMAS PIE

1 baked pie shell

Filling
1 envelope unflavored gelatin
1 cup each sugar
1/4 cup flour
1/4 tsp salt
1 3/4 cup milk
1/2 cup heavy cream
3/4 tsp vanilla extract
1/4 tsp almond extract
3 egg whites
1 can flaked coconut
Maraschino cherries

Combine gelatin, 1/2 cup sugar, flour and salt into a medium saucepan. Gradually stir in milk. Cook over low heat; stir constantly until it comes to a boil. Remove from heat and cool. (If mixture becomes to stiff, beat with a mixer until smooth.)

Whip cream until stiff and fold into the cooked mixture, along with both extracts. Beat egg whites until frothy and gradually add 1/2 cup sugar, beating until whites are stiff but not dry. Fold beaten whites and coconut until gelatin mixture. Turn into pie and chill at least 4 hours. Garnish with cherries.
