1/2 cup butter, melted
1/2 cup lemon juice
1 tbsp each paprika and dried oregano
1 tsp each garlic salt, dried coriander and ground cumin
1 whole chicken, quartered
1/2 tsp each salt and pepper
Combine first 7 ingredients; reserve 1/2 cup mixture for later.
Sprinkle chicken with salt and pepper. Place in a resealable bag and pour remaining butter mixture evenly over chicken. Seal and chill, along with reserved butter mixture for 8 hours.
Remove chicken and discard marinade. Grill, covered, over medium high heat (350-400 degrees) for 40-45 minutes or until done, basting often with reserved butter mixture and turning once. Serves 4
