GARLIC OIL

2 heads garlic, cloves separated, peeled and lightly smashed
2 cup extra virgin olive oil

Add the garlic and olive oil to a saucepan. Heat the oil to a very gentle simmer and let it cook for 10 minutes.Let it cool, then jar it and refrigerate it.


Note: I sometimes like to add dried red pepper flakes and other dried Italian herbs to the oil and use it whenever I would use olive oil in cooking.
