TRIPLE RICH CHOCOLATE SQUARES
Category: Layered Desserts
14 chocolate sandwich cookies
2 (8 oz) pkg cream cheese, softened
1/2 cup sugar
1/3 cup chocolate drink powder
2 tbsp flour
3 eggs, room temperature
1 tsp vanilla extract
1/4 cup semi-sweet chocolate chips
1 1/2 tsp vegetable shortening
Preheat oven to 350. Line a 9 inch baking pan with foil, leaving 2 inch overhangs. Finely grind cookies in a food processor and transfer to baking pan. Press firmly over bottom. Set aside.
In a large bowl, beat cream cheese and next 5 ingredients until just blended and smooth. Pour over crust in pan. Bake for 25 minutes or until set but still soft in center. Cool completely in pan on wire rack. Refrigerate, covered, at least 3 hours or overnight.
At serving time, melt chocolate chips and shortening in the microwave on high for 1-2 minutes. Dip tip of a small spoon into chocolate and let drizzle in a random pattern over surface of chilled dessert. Using foil overhangs as handles, lift square from pan. Peel away sides of square and cut into squares.
