BOURBON SWEET POTATOES (Make-Ahead)

3 cups cooked sweet potatoes (I use two large cans; drained)
1/2 cup butter (room temperature)
1/2 cup brown sugar
1/4 cup bourbon
1/3 cup orange Juice
1/2 tsp. Pumpkin Pie Spice
1 tsp. vanilla
2 eggs; beaten
One shot of bourbon, Might need two
1 large bag of Mini-Marshmallows (you might not use the entire bag if applying once)
Grease a 21/2 quart casserole dish. Cooked sweet potatoes with skins on (my guess is approximately 6 potatoes or 4 lbs.); peel, set aside. Cream butter with mixer; add sugar; slowly add bourbon, orange juice, pumpkin pie spice, and vanilla. Add sweet potatoes to butter/sugar mix. Add eggs. Pour into greased casserole dish. Drink shot of bourbon. (Stop here if you are making this ahead of time. Keep in refrigerator. It will keep for 12 hours.) Place in the oven at 350 for 40 to 45 minutes.
Be careful with the next step: 10 minutes before serving arrange marshmallows on top. Brown marshmallows. Be careful there is a small window between browned and Cajun marshmallows. If, marshmallows burn; drink another shoot of bourbon, scrap marshmallows off and try again.
