SUGAR AND SPICE BAKED APPLES

Medium-sized golden delicious apple, 1 per person

Sugar And Spice Mixture (This makes about 2 cups)
1/2 lb light brown sugar
1/2 lb dark brown sugar
2 tsp cinnamon
1 tsp nutmeg
1/2 - 1 cup coarsely chopped pecans

Mix together the ingredients for the Sugar And Spice Mixture. Store in an air-tight container in a dry place.

Core and peel apple and place in an individual ramekin. Lightly pack about heaping tbsp of mixture in each apples center and sprinkle some on the top and sides. Cover with plastic wrap and microwave the apples. Microwave on high: 1 apple – 6-6 1/2 minutes; 2 apples – 7 minutes; 4 apples – 8 minutes. (The apples are ready when springy to the touch. NOTE: The can also be baked at 350 for 30-45 minutes, basting apple with liquid from pan.
