BBQ BAKED BEANS IV

4 slices bacon, diced
1 medium onion, diced
4 medium garlic cloves, minced
1 lb dried navy beans, rinsed and picked over
1 cup strong black coffee
1/4 cup packed brown sugar
1 tbsp mild molasses
1 1/2 tbsp prepared brown mustard
1/2 cup plus 1 tbsp barbecue sauce
1/2 tsp hot pepper sauce
Salt
8 cups water
Ground pepper
Preheat oven to 300. Heat a large Dutch oven over medium heat for 2 minutes, add the bacon, and cook until lightly browned and most of the fat is rendered, 5-6 minutes. Stir in the onion and continue to cook until the onion has softened, about 8 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the remaining ingredients. Increase the heat to high; once boiling, cover and the pot and place it in the oven.
Cook, stirring once every hour, until the beans are thoroughly soft, about 4 hours. Remove the lid and continue to cook until the liquid has thickened to a syrupy consistency, 1 – 1 1/2 hours. Remove from the oven and stir in up to 1 tbsp barbecue sauce, salt and pepper for taste.
