RUSTIC APPLE TOP CAKE

1 cup cake flour
1 tsp baking powder
1 cup sugar
3 large eggs
1 tsp vanilla extract
1 tsp cinnamon
1/2 cup milk
7 tbsp unsalted butter at room temperature
2 large apples, peeled & cored

Topping: (Optional)
1 tsp cinnamon
3 tbsp sugar

Preheat oven to 350 degrees F. Lightly grease and flour a 9 inch spring-form pan. Whisk together the flour, baking powder, sugar, eggs, vanilla, and cinnamon. Stir in the milk until mixed. Break up the butter into pieces and stir it into the batter. Pour the batter into the prepared pan.

Thinly slice the apples and arrange them around the cake in a decorative manner. Stir together the cinnamon and sugar and sprinkle on top of the cake. Bake for 20 to 35 minutes, or until a cake tester inserted into the center comes out clean. Cool, remove from the pan and serve.
