SOUTHERN STYLE OVEN FRIED CHICKEN

4 tbsp butter
1 cup baking mix
1/2 cup finely chopped pecans
1 tsp each paprika and salt
1/2 tsp poultry seasoning
1 (5 oz) can evaporated milk
3 lb fryer, cut into serving pieces

About 1 1/4 hours before serving, in a large roasting pan, melt butter in a 400 degree oven.

Meanwhile, on waxed paper, combine baking mix, nuts and seasonings. Into a pie plate, pour milk. Dip chicken pieces into milk and then into baking mix mixture.

Place chicken skin-side down, in roasting pan. Bake for 30 minutes.

Carefully turn chicken and bake and additional 20 minutes or until juices run clear when pierces with a fork. Cover with foil after 10 minutes if chicken begains to brown too quickly. Arrange chicken on platter. Serves 4
