CHRISTMAS CHEESE PIE

1 deep dish pie crust
3 cups ricotta cheese
1/4 cup flour
2 tbsp grated orange rind
1 tbsp grated lemon peel
1 tbsp vanilla extract
1/2 tsp salt
1/4 tsp ground nutmeg
4 eggs, lightly beaten
1 cup sugar

Garnish
Kiwi slices
Confectioners sugar

Preheat oven to 350. Mix all ingredients together and spoon into pie crust. Bake for 45 minutes or until firm in the center. Let cool on rack.

Dust with confectioners sugar and garnish with kiwi slices.
