CINNAMON APPLE QUICK BREAD

2 cups all-purpose flour
1 cup sugar
2 tsp baking powder
2 tsp ground cinnamon
1 tsp salt
1 cup buttermilk
1/4 cup vegetable oil
2 large eggs
1 tsp vanilla extract
2 apples, peeled, cored, and cut into 1/2 inch dice
Topping: (Optional)
3 tbsp sugar
1 tsp ground cinnamon
Preheat the oven to 350 degrees F. and grease a loaf pan. In a bowl, toss the diced apples with 1 tsp cinnamon and 1/4 cup sugar. Set aside.
In a large bowl mix together the oil, buttermilk, eggs, and vanilla until smooth. Add the flour, baking powder, salt, remaining ground cinnamon and sugar. Beat until smooth, about 3 minutes. Add the diced apple pieces and gently fold into the batter. Pour the batter into the prepared pan and smooth the top.
Mix together the sugar and cinnamon for the topping if using and sprinkle over the top of the loaf. Bake for about 50 minutes or until a cake tester come out cleanly. Cool to room temperature before slicing.
