CARMEL APPLE CAKE

1 1/2 cups vegetable oil
1 1/2 cups sugar
1/2 cup packed brown sugar
3 eggs
3 cups flour
2 tsp cinnamon
1/2 tsp each nutmeg and salt
1 tsp baking soda
3 1/2 cups diced peeled apples
1 cup chopped walnuts
2 tsp vanilla extract
24 caramels, cut into 1/2 inch pieces
Caramel Icing
1/2 cup packed brown sugar
1/3 cup ligh cream
1/4 cup butter
Dash salt
1 cup confectioners sugar
Chopped walnuts, optional
Preheat oven to 325. In a bowl, combine oil and sugars. Combine dry ingredients; add to batter and stir well. Fold in apples, walnuts, caramel pieces and vanilla extract. Pour into a greased and floured 10 inch bundt pan. Bake for 1 1/2 hours or until cake test done. Cool in pan 10 minutes; remove to a wire rack to cool completely.
In a double boiler, heat first 4 icing ingredients until sugar is dissolved. Cool to room temperature. Beat in confections sugar until smooth; drizzle over cake. Sprinkle with nuts.
