BACARDI RUM PARTY CHILI

1 tablespoon vegetable oil
2 medium onions, chopped
2 cloves garlic, minced
3 pounds coarsely ground beef chuck
2 tablespoons chili powder
1/2 teaspoon dried oregano
1 teaspoon salt
1/2 cup dark rum
1 can (6 ounces) tomato paste
1 can (28 ounces) chopped tomatoes
3 cans (15 ounces each) kidney beans, drained and rinsed

In 8-quart pot, heat oil. Add onions and garlic and lightly sauté, stirring, until just golden, about 3 minutes. Add meat, breaking it up and stirring with a wooden spoon until it browns. Add remaining ingredients and stir to combine. Cover and simmer 2 hours, stirring about every 20 minutes. Check seasonings and adjust if needed. Serves 10
