GRILLED SALMON ALASKA

Category: Seafood and Fish - Grilled

1/2 cup brown sugar
2 tbsp lemon juice
1/2 cup white wine or sake
1/4 cup soy sauce
.5-1 tsp fresh grated ginger (optional)
Pinches of fine white pepper
4 tbsp butter, softened
2 pounds salmon fillets
2 tsp toasted sesame seeds
3-4 scallions, minced

Heat brown sugar through pepper in a saucepan until ingredients marry, then cool. Use to marinate salmon in refrigerator for 2-4 hours. Remove from marinade and reduce marinade to taste (at least 25 percent), strain, add butter and use as a glaze and serving sauce.

Meanwhile, grill salmon to taste, starting skin side up and finishing skin side down, brushing the meat with glaze. Serve sprinkled with sesame seeds and onions.

Great served with favorite BBQ Sauce.
