Two variations: one uses bratwurst patties, the other classic bratwurst braised in beer - both are great! Pair with fresh Brioche Buns, potato salad and fresh greens.
6 homemade Beer & Brat Patties or 6 fresh Bratwurst
2 large sweet onions, sliced 1/4 inch thick
1 12 oz bottle of Guinness Stout (2 bottles if making classic brat sausages)
1/4 cup brown sugar
8 oz bloomy rind cheese (MouCo, Brie, Camembert, St Andre, Cambozola, etc. Also great with
grated Gruyere or Swiss)
Fresh Brioche buns
Coleman Mustard (optional)
If using Bratwurst Patties:
Choose Bratwurst patties, or remove bratwurst from casings and shape into 6 patties about 1/2 inch thick – keep refrigerated until ready to grill.
If using Stuffed Sausages:
Place raw bratwurst in a roasting pan, pour one bottle of Guinness Stout and one half bottle water over the top, cover with foil or a lid and roast in a 325° oven until fully cooked - about 45 minutes.
In a second pan, place sliced onions with Guinness and brown sugar and reduce over medium heat and finally low heat until only about 1/4 cup of glaze remains with the onions.
Slice cheese into about 12 even pieces and rest on plastic wrap at room temperature to soften.
When the onions are about 3/4 done, grill bratwurst over medium high heat until just done. Split buns and toast on grill, and then brush lightly with mustard (if using). Serve patties or brats on buns, smothering with glazed onions and topping with cheese.
Great with fresh greens and potato salads - or serve sausages over mashed potatoes, smothered with onion glaze, toasted brioche buns with melted cheese on the side.
