1 lemon, squeezed
1-2 clove garlic, minced
1 tbsp dried thyme
Salt and pepper
4-6 medium potatoes, scrubbed and quartered
1-2 tbsp butter, melted

Preheat oven to 425. Place potatoes in a bowl and combine with remaining ingredients. Pour into a roasting pan and roast the potatoes about 1 hour, stirring occasionally until tender and nicely browned.
