HERB ROASTED CHICKEN

Category: Chicken

1 (1 1/2 to 1 3/4 lb) chicken
4 tbsp butter, melted
1 tbsp lemon juice
1/2 tsp each dried oregano, rosemary and sage
1/4 tsp salt and pepper

Preheat oven to 450. Cut chicken in half and arrange skin side up in a roasting pan. Combine remaining ingredients in a small bowl and mix well. Brush the chicken with the butter mixture. Roast until juices run clear, about 20 minutes. Broil 6 inches from heat for 3 minutes to brown.
