ROCKY ROAD SQUARES WITH CARAMEL SAUCE

10 (1 oz) squares semi-sweet chocolate
3 tbsp butter
Whites from 4 eggs
1/4 cup sugar
Yolks from 3 eggs
2 cups chopped pecans, toasted
2 1/3 cups mini-marshmallows
Caramel sauce
2 cups sugar
1/4 cup corn syrup and water
2 cups heavy whipping cream
Pureed strawberries
Butter loaf pan.
In a large saucepan, melt chocolate and butter over low heat, stirring constantly until smooth. Remove from heat. Beat egg whites with 2 tbsp sugar until softened peaks form. Beat egg yolks with remaining sugar until yellow. Gently fold in the yolks into the melted chocolate, then fold in egg whites. Fold in pecans and marshmallows. Spoon mixture into loaf pan, shaking down lightly until filled. Cover and freeze 4 hours or until frozen.
To serve, cut Rocky Road into 16 slices and serve with sauce or pureed strawberries
Sauce: Bring sugar, corn syrup and water to a boil in a saucepan. Boil about 10 minutes until medium-golden. Remove from heat and carefully stir in cream (this will bubble up a lot). Return to heat and bring to a boil, stirring. Reduce heat to medium-low and simmer 8-10 minutes, stirring constantly, until reduced and thickened, like molasses. Cool. If too thick, stir in a little more cream.
