BUTTERY HERBED CHICKEN

1 cup regular long-grain rice
2 cups chicken broth
2 tablespoons light butter, softened
1/4 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 teaspoons olive oil
1 pound chicken breast tenders
Prepare rice according to package directions, using chicken broth instead of water and omitting salt and fat.
While rice cooks, combine butter, Italian seasoning, salt and pepper in bow; stir well.
Heat oil in a large non-stick skillet over medium-high heat. Add chicken, and cook 4 minutes on each side or until done. Remove pan from heat; add butter mixture, tossing well to coat chicken. Serve immediately over rice.
