RICE AND ORZO
Category: Rice/Risotto
3 oz each long grain white rice and orzo
2 cups chicken broth
2 clove garlic, minced
1/2 medium onion, diced
4 large mushrooms, sliced
1 1/2 tbsp Italian parsley, chopped
4 fresh basil leaves, chopped
1/2 cup sweet peas
1 tbsp olive oil and butter
Romano cheese
Heat oil in a large saucepan over medium heat. Add onions and garlic, sauting until onions become transparent. Add mushrooms and continue to saute until mushrooms are cooked. Remove from pan and set aside.
Melt butter in saucepan and add rice and orzo. Saute until mixture is golden. Carefully stir in broth and next spices, peas and mushroom mixture and bring to a boil. Cover and reduce heat. Simmer 25-30 minutes or until rice is tender. Serve with grated cheese.
