ITALIAN CRAB STUFFED MUSHROOMS

2 cups Italian bread crumbs
2 cups grated Romano cheese
1/2 cup white wine
3 cloves garlic, minced
1 cup chopped crabmeat (drain if using canned)
Salt to taste (optional)
Freshly ground pepper to taste
1 1/2 cups butter, melted
1/2 cup freshly chopped Italian parsley
6 to 8 very large white mushrooms (see note)
1 cup shredded mozzarella cheese
In a medium bowl, combine bread crumbs, Romano cheese, wine, garlic, crab, salt and pepper and mix well. Add melted butter and parsley and mix until mixture is wet and of a doughlike consistency. Add extra butter or bread crumbs to adjust consistency if needed.
Remove stems from mushrooms and stuff each with the bread crumb mixture, mounding it.
Preheat oven to 350 degrees.
Microwave mushrooms 1 minute until soft. Place mushrooms on a lightly greased baking sheet and cover with mozzarella cheese. Bake in preheated oven 10 minutes or until mushrooms are cooked through, filling is hot and cheese is melted. Serve immediately.
