GERMAN POTATO SALAD

3 pounds red potatoes
6 oz thinly sliced bacon
1/4 large yellow onion, grated
2 cups vinegar
2 cups sugar
Pinch of salt
1/4 tsp black pepper
3 tbsp cornstarch
3 tbsp water

Wash potatoes and cut into about 1/8-inch slices. Drop into boiling water and cook until just tender, 6 to 8 minutes; they should still be quite firm. Do not overcook or potatoes will get mushy when sauce is added. Set aside to cool.

In a medium skillet, fry bacon until crisp. Add onion and saute 1 minute.

In a large saucepan, combine vinegar, sugar, salt and pepper. Bring to a boil and cook 5 minutes, stirring, until sugar is dissolved.

In a small bowl, combine cornstarch and water. Gradually add to mixture in saucepan and simmer until thickened, about 5 minutes. You may not need to add all the mixture. Pour over cooled potatoes and mix well.

Note: Sauce also can be used as a hot bacon and spinach salad dressing.
