Chicken salad (see recipe)
4 slices purchased cranberry bread
1 tbsp mayonnaise
2 oz shredded romaine lettuce
2 slices sweet pickle chips
Fresh fruit, fries, chips or slaw for garnish

For chicken salad:
1 cup mayonnaise
1 tsp seasoned salt
1 tsp sugar
Pinch of white pepper
1/4 tsp salt
2 tbsp buttermilk
10 oz cooked, diced chicken (about 2 cups)
3/4 cup halved red grapes
1/2 cup diced celery (cut into 1/4-inch pieces)
1/4 cup cashew pieces
1 tbsp chopped green onions
1 1/2 tbsp chopped parsley

Prepare chicken salad. Refrigerate until ready to serve.

To assemble: Warm bread on griddle. Do not toast. Spread mayonnaise on each slice of warmed bread. Place lettuce on two of the pieces and top those pieces with the chicken salad. Place remaining slices of bread on top of chicken salad. Garnish with pickle chips speared on a toothpick. Cut in half and serve with fruit, fries, chips or slaw.

Chicken salad:

To make dressing: In large bowl, combine mayonnaise, seasonings and buttermilk. Mix until well combined. Refrigerate until ready to use.

To make salad: In medium bowl, combine remaining ingredients with dressing and mix. Refrigerate until ready to use.
