Fried onion mix (see recipe)

1 head napa cabbage, shredded
1 head bok choy, shredded
1 carrot, diced

Chili buttermilk ranch dressing (see recipe)

For fried onion mix:
1 small onion, sliced 1/8 inch thick
1 cup buttermilk
1/2 cup flour
Olive oil for frying
1/4 cup wasabi peas
1/4 cup onion and poppy seed crackers, crumbled (see note)
1/4 cup unsalted roasted soy nuts
1/8 cup unsalted roasted sunflower seeds

For soy reduction:
1 cup low-sodium soy sauce
1 tbsp sugar
1 tbsp water
1 tbsp cornstarch

For chili buttermilk ranch dressing:
1 cup sour cream
1/4 cup buttermilk
1/4 cup rice vinegar
1 tbsp ranch dressing mix
1 dash Sriracha (Asian hot sauce) (see note)

Make fried onion mix. (With soaking, this takes a few hours.)

Make soy reduction.

When ready to serve salad, in a large bowl, combine cabbage, bok choy and carrot and toss. Mix chili buttermilk ranch dressing. Add onion mix to salad. Toss salad with the dressing and drizzle with the soy reduction.

Note: Can be served with grilled chicken or sauteed shrimp if desired.

Fried onion mix: Soak onion in buttermilk 2 to 3 hours or until saturated but not soggy. Dust with flour.

When ready to prepare, heat 1/2 inch oil in a medium pan. Add onion in small batches and fry until dark brown, 3 to 4 minutes. Using a slotted spatula, remove from oil and add to combined wasabi peas, onion and poppy seed crackers, soy nuts and sunflower seeds. When mixed, transfer to a wire rack or set on a counter lined with paper toweling to dry.

Note: Onion and poppy seed crackers are available at Outpost Natural Foods.

Soy reduction: In heavy, medium-size saucepan bring soy sauce and sugar to a boil. In a small bowl combine water and cornstarch and whisk until smooth. Gradually add to boiling liquid. Reduce heat to a simmer and cook 5 minutes. Mixture should look soupy. Cool completely. Mixture will become slightly gelatinous as it cools. Whisk before using. Store unused soy reduction in refrigerator.

Chili buttermilk ranch dressing: Combine all ingredients and whisk until blended.
