CHILLED CHOCOLATE-PEANUT BUTTER SQUARES

Category: Bars

1 1/2 cups coarsely crushed cornflakes
1/2 cup coarsely crushed rice crispies cereal
1 cup peanut butter
1/2 cup packed brown sugar
1/2 cup light corn syrup
1 small pkg instant vanilla pudding
5 (1 oz) squares semi-sweet chocolate
3 tbsp butter

In a bowl, combine first 3 ingredients until well mixed. In a small saucepan, cook brown sugar and corn syrup just until sugar dissolves; add to peanut butter mixture; stirring well until mixed. Pat mixture evenly into a thin layer in bottom of a well-greased 13x9 inch baking pan; refrigerate, covered, at least 1 hour.

Meanwhile, prepare pudding according to package directions. Pour over chilled crust, spreading evenly. Refrigerate, covered, at least 30 minutes.

Melt chocolate and butter, stirring constantly and drizzle over pudding. With a sharp knife, cut into squares. Refrigerate, covered, until just before serving. Recut squares to serve and arrange on chilled platter.
