1 Tbsp. unsalted butter
2 garlic cloves, peeled & minced
1/2 c. sliced scallions (white & light green parts only)
3 large eggs
1 c. milk
1/2 c. small curd cottage cheese
1/2 c. baking mix
10 oz. pkg. frozen chopped spinach, thawed & thoroughly squeezed dry
1 tsp. fresh lemon juice
Salt & freshly ground black pepper to taste
1/3 c. finely shredded or grated Parmesan cheese
1/4 tsp. ground nutmeg

Preheat your oven to 350 degrees. Coat a 9-inch pie dish with cooking oil spray.

In a medium frying pan, melt the butter over medium heat. In it, saute the garlic for 1 minute or until fragrant. Stir in the scallions and saute for 2 minutes more or until softened. Remove from heat and set aside.

In a mixing bowl, whisk the eggs and milk together until well combined. Stir in the cottage cheese, Bisquick, spinach & lemon juice until well mixed. Then fold in the garlic-scallion mixture. Season to taste with salt & freshly ground black pepper. Spoon mixture evenly into prepared pie dish.

Sprinkle Parmesan cheese evenly over top of pie. Then dust lightly with the ground nutmeg. Bake for 30-35 minutes or until a knife inserted in the middle comes out clean. Allow pie to cool for 5 minutes before cutting into wedges.
