ROMAINE FRUIT & CASHEW SALAD WITH A LEMON POPPY SEED DRESSING

1/2 c. fresh lemon juice
Grated zest from one lemon
1/2 c. sugar
2 tsp. dried minced onions
1 tsp. Dijon mustard
1/4 tsp. salt
2/3 c. canola oil
1 Tbsp. poppy seeds
1 large head of Romaine lettuce, torn into bite-size pieces
1 apple, peeled, cored & diced
1 pear, peeled, cored & diced
1 Tbsp. fresh lemon juice
1 c. (4 oz.) shredded Swiss cheese
1 c. cashews
1/3 c. dried cranberries
Freshly ground black pepper to taste

Make the salad dressing. In the bowl of your food processor or blender container, place items 1-6 and process until smooth. Add the canola oil & poppy seeds and blend until well combined. Pour dressing into a covered jar & refrigerate for up to 5 days in advance.

In a large salad bowl, place the Romaine lettuce.

In a medium bowl, toss the apples & pears with a tablespoon of the lemon juice to prevent them from browning. Then toss them with the Romaine along with the cheese, cashews & cranberries. Season salad to taste with freshly ground black pepper. Either coat salad with enough of the dressing or serve it on the side. Serves 4 with a cupful of dressing
