LIME BARS FROSTED WITH A LIME BUTTERCREAM

1/2 c. unsalted butter, softened
1/4 c. confectioner’s powdered sugar
1 c. flour
2 large eggs
1 c. sugar
2 Tbsp. flour
1/2 tsp. baking powder
2 Tbsp. fresh lime juice
Grated rind or peel from one lime
4 Tbsp. (1/2 stick) unsalted butter, softened
2 c. confectioner’s powdered sugar
3/4 tsp. pure vanilla extract
Grated rind or peel from one lime
Freshly squeezed juice from 1/2 of a lime

Preheat your oven to 350 degrees. Coat an 8-inch square baking dish with butter.
Make the crust. In a medium bowl, combine first 3 ingredients until mixture is crumbly. Press evenly into the bottom of your prepared baking dish and bake for 15 minutes. Remove from oven and place on a wire rack.

In the meantime, make the filling. In a mixing bowl, beat the next 5 ingredients for one minute or until smooth and well blended. Pour over warm crust and return to the oven. Bake for 20-23 minutes or until top is very lightly golden. Cool completely in the baking dish on a wire rack.

Make the Lime Buttercream. In a mixing bowl, beat remaining ingredients until smooth. Carefully spread evenly over cooled bars. Allow frosting to set for a few hours before cutting into bars. Store any leftovers in an airtight container at room temperature for up to 3 days.
