BRANDIED STRAWBERRY JAM

1 quart strawberries, hulled & quartered
1/2 c. sugar
3 Tbsp. brandy
1 tsp. pure vanilla extract
Additional 1 Tbsp. brandy
In a heavy saucepan, combine items 1-3. Bring to a boil. Reduce heat and simmer, uncovered, for 45 minutes or until reduced to 1 1/2 cups stirring occasionally.
Remove from heat and stir in the vanilla extract and additional tablespoon of brandy. Cool to room temperature. Spoon into a covered jar or container and refrigerate for up to 2 weeks.
Note: This jam does not involve canning and will keep in the refrigerator for up to 2 weeks.
