CORNED BEEF BRISKET WITH AN APPLE GLAZE

4-5 lb. corned beef brisket
1 large onion, peeled & halved
1 large garlic clove, peeled & halved
8 whole cloves
1 c. apple jelly
1/4 c. Dijon mustard
1/4 c. packed light or dark brown sugar
2 Tbsp. Calvados or other apple brandy, or you can use apple juice or cider
In a large pot, place the corned beef followed by the onion, garlic & cloves. Cover ingredients with water and bring to a full boil. Then lower heat and simmer, partially covered, for 3 hours or until the beef is very tender when tested with a fork.
Preheat oven to 350. Coat a 9×13-inch baking dish with cooking oil spray.
Remove meat to a large colander and drain well. Place fat side down in a prepared baking dish.
Make the Apple Glaze. In a small bowl, whisk items 5-8 together until smooth. Spread glaze evenly over top of meat to coat thoroughly. Bake, uncovered, for 25 minutes or until glaze is nicely browned. Remove from oven and allow meat to cool for 10 minutes before carving. Serves 6-8
