BROCCOLI VINAIGRETTE SUPREME

1 1/2 lb fresh broccoli
1 tsp dried whole oregano
1/4 tsp each salt and pepper
1/4 cup olive oil, divided
1/2 cup dry red wine
1/4 cup red wine vinegar
1 small onion, thinly sliced
1 (2 1/2 oz) can sliced olives
1/2 cup diced provolone cheese
Optional ingredients:
1/4 cup lemon juice
1/2 tsp hot pepper sauce
2 tbsp dried tarragon
1/4 tsp ginger
Remove and discard the bottom 2 inches from broccoli stalks; separate broccoli into flowerets. Remove stems and thinly slice. Set aside.
Combine oregano, salt, pepper and 3 tbsp olive oil in a small bowl. Stir in wine, vinegar and any of the optional ingredients. Set aside.
Pour remaining 1 tbsp olive oil into a Dutch oven and add the onion, olives and broccoli; pour dressing over vegetable mixture. Place over medium-high heat and bring to a boil. Reduce heat, simmer, uncovered, until broccoli is tender, about 15-20 minutes, stirring occasionally. Transfer vegetable mixture to platter. Sprinkle with cheese.
