SUMMER SQUASH CASSEROLE

3 medium yellow summer squash sliced
3 medium zucchini sliced
1/2 medium yellow onion chopped

Blanch the squash and onion together until the onion is clear. Drain very well

Add:
1 cup chopped green chiles
1/2 cup longhorn cheese shredded
1/2 cup Monterey jack cheese shredded
1/2 stick butter chopped in pieces
2 well beaten eggs

Season, to taste:
Salt, pepper, garlic powder and a dash of red pepper

Pour into buttered casserole dish. Bake at 350 for 1 hour or until set.
