HOISIN AND BOURBON-GLAZED TUNA WITH TOMATO RELISH

6 (6-ounce) tuna steaks
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/3 cup hoisin sauce
2 tablespoons seasoned rice vinegar
2 tablespoons bourbon
2 tablespoons maple syrup
1 1/2 teaspoons grated peeled fresh ginger
1 1/2 teaspoons fresh lime juice
1/2 teaspoon chile paste with garlic
1 garlic clove, minced
Tomato Relish, recipe follows
Sprinkle tuna steaks with 1 salt and 1 black pepper. Prepare grill.
Combine hoisin sauce and remaining ingredients in a small bowl; stir with a whisk.
Place tuna steaks on grill rack coated with cooking spray; cook 5 minutes. Turn and baste tuna with hoisin mixture; cook 5 minutes. Turn and baste tuna with hoisin mixture; cook 2 minutes or until tuna flakes easily when tested with a fork. Serves 6
Tomato Relish
2 cups chopped tomato
1 cup chopped yellow tomato
1/2 cup finely chopped seeded peeled cucumber
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped red onion
3 tablespoons chopped fresh basil
2 tablespoons fresh lime juice
1 1/2 teaspoons chopped fresh mint
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon crushed red pepper
Combine all ingredients in a bowl; toss to combine. Serve with a slotted spoon.
