MEXICAN TACO DINNER

1 Tbsp. vegetable oil
1/4 c. chopped yellow onions
1 lb. lean ground beef
6 oz. can tomato paste
5 cans of water from the 6 oz. can of tomato paste
1 Tbsp. sugar
1 tsp. chili powder
1 tsp. ground cumin
1 tsp. dried oregano
1/2 tsp. garlic powder
1/2 c. uncooked white long grain rice
1 bag or Corn Chips or Scoops Corn Chips
Add ons:
Shredded lettuce
Chopped tomatoes
Chopped scallions/green onions
Grated sharp Cheddar cheese
Sour cream
In a large frying pan over medium heat, heat the vegetable oil. In it, saute the onions for 2 minutes or until softened. Add the ground beef and cook, breaking up, until browned. If necessary, drain off any fat from pan.
Stir in the tomato paste and water until blended. Then stir in items 6-11 and bring to a boil. Reduce heat, cover & maintain a simmer for 20-25 minutes or until rice is tender. Remove from heat. Serve over a bed of corn chips.
Top as desired in small serving bowls allowing guests to help themselves. Serves 4
