NORDSTROMS - NORDY BARS

1/2 c. unsalted butter
11 or 12 oz. pkg. (2 c.) of butterscotch chips
1/2 c. firmly packed light brown sugar
2 large eggs, beaten
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 tsp. pure vanilla extract
12 oz. pkg. (2 c.) semi-sweet chocolate chips
2 c. miniature marshmallows
1 c. chopped pecans

Preheat your oven to 350 degrees. Generously butter a 9×13-inch baking dish.

In a medium saucepan over medium-low heat, melt the butter. Add the butterscotch chips and brown sugar and stir constantly until mixture is melted. When melted, remove from heat and cool for 5 minutes.

Using the saucepan for your bowl, whisk in the eggs until well blended. Then whisk in the flour, baking powder & salt until thoroughly combined. Stir in the vanilla extract. Set aside until batter is cool.

Fold in the chocolate chips, marshmallows & pecans using a rubber spatula. Spread mixture evenly in prepared baking dish. Bake for 25 minutes only. Remove from oven and set pan on a wire rack to cool completely. They will be soft and somewhat gooey but will well set as they cool.

Cut these rich bars into small squares and store in an airtight tin between sheets of waxed paper or in paper muffin cups for up to 5 days.
