ITALIAN ROASTED POTATO SLICES

4 large russet potatoes, scrubbed & sliced into 1/4-inch slices
4 Tbsp. olive oil
4 tsp. Italian seasoning
Salt & freshly ground black pepper to taste
1/2 c. grated Parmesan cheese

Preheat oven to 450 degrees. Coat a large baking sheet with cooking oil spray.

In a large bowl, toss the 1st 4 ingredients together to coat potatoes evenly with the mixture. Spread potatoes in a single layer on the prepared baking sheet. Roast for 10 minutes. Using a spatula, stir up potatoes so they won’t stick as they continue to cook. Bake for an additional 10 minutes or until lightly browned and tender.

Sprinkle the Parmesan cheese evenly over the potatoes and continue to cook for 5 minutes more. Serves 4-6
