HERB ROASTED FINGERLING POTATOES

1 1/2 lbs. whole fingerling potatoes
2 Tbsp. olive oil
1 tsp. kosher salt
1/2 tsp. dried sage
1/ tsp. dried thyme
1/2 tsp. freshly ground black pepper

Preheat oven to 450 degrees. Spray a baking sheet or dish large enough to contain the potatoes in a single layer with nonstick cooking oil spray. Scrub the potatoes clean and pat dry with paper towels.

In a mixing bowl, whisk items 2-6 together. Toss in the potatoes until they are evenly coated with the oil & herb mixture. Spoon evenly in one layer onto the prepared baking dish. Bake for 30 minutes or until crispy on the outside and creamy tender in the inside. Serve hot. Serves 4
