8 oz. medium egg noodles
3/4 c. frozen peas (no need to thaw)
1 Tbsp. unsalted butter
Salt & freshly ground black pepper to taste
1 2/3 c. sour cream (low fat is good)
1/3 c. chopped yellow onions or 1/3 c. green onions/scallions, chopped
1/2 c. grated Parmesan cheese
2 Tbsp. poppy seeds
In a large saucepan, cook the noodles per package instructions. Add the peas during the last 3-4 minutes of cooking time. Drain and spoon into a large serving bowl and toss with the tablespoon of butter until noodles are evenly coated with the butter. Season generously with the salt & pepper to taste.
In a small bowl, whisk the sour cream, onions, Parmesan cheese & poppy seeds together. toss into the noodles until they are evenly coated with the mixture. Serve noodles hot. Serves 4
