BAKED HAM WITH A BROWN SUGAR & APRICOT GLAZE

Category: Ham

A whole 10-14 lb. fully cooked ham with skin & excess fat removed
whole cloves, approximately 30
1/3 c. dry mustard powder
1 c. apricot jam or preserves
1 c. packed light brown sugar

Preheat oven to 325. Place ham on a rack in a large roasting pan.

Insert cloves in ham every inch or so. Be sure to push cloves into the ham surface as far as they will go.

Make the glaze. In a small bowl, whisk the mustard powder and apricot jam together until well combined. Spread over the entire surface of the ham. Pat the brown sugar over the apricot glaze.

Bake, uncovered, for 3 hours. Count on 16 minutes per pound. The sugary crust that forms on the ham keeps the juices in. Remove ham from the oven and let sit for 15-20 minutes before carving. Serves 10-12
