BLUE CHEESE LOGS

1/4 lb Blue cheese
1 (8 oz) pkg cream cheese, room temperature
1/2 lb sliced Prosciutto or Pastrami
1/4 cup minced parsley
Paprika
Cocktail picks
Salad greens

Let cheese stand at room temperature until softened; blend together. Spread mixture thinly on Prosciutto or Pastrami; roll up snugly; chill until firm. Cut logs into 2-inch lengths; dip one end in parsley, the other in paprika. Spear each log with a cocktail pick. Serve on crisp greens. Makes 4 dozen.
