ASPARAGUS APPETIZER

Category: Cold

Asparagus (allow 5 to 6 stalks per person)
1 Cup sour cream
2 Tablespoons horseradish
1 teaspoon lemon juice
Pinch salt
White pepper

Wash and peel asparagus, break off lower stems. Cook until just done and then plunge vegetables into cold water. Drain and chill.

Mix remaining ingredients and let sit to blend flavors. Top each serving of asparagus with a spoonful of sauce.
