*BAKED STUFFED PORK TENDERLOIN*

1/2 cup chopped onion and celery
1 1/2 cups chicken broth
1 (6 oz) pkg unseasoned stuffing mix cubes (6 cups)
1/2 tsp dried sage and thyme
1/8 tsp dried marjoram
1 lb pork tenderloin
1 tsp dried parsley
1/4 tsp salt
1/8 tsp pepper

Preheat oven to 350. In a large saucepan, combine first 3 ingredients and simmer, covered, on low until vegetables are soft. Add next4 ingredients. Mix well until blended. Set aside.

Splice pork into 1/4 inch slices. Arrange half of slices in an 8 inch square pan lightly coated with cooking spray. Top with stuffing. Place remaining pork slices on stuffing. Sprinkle with remaining seasonings. Cover with foil and bake for 30 minute or until pork is no longer pink. Serves 4
