*BAKED PORK CHOPS – ITALIAN STYLE*

2 tbsp oil
4 pork chops, about 1 inch thick
4 tbsp butter
1 lb mushrooms, sliced
2 shallots, chopped very fine
Salt and pepper, to taste
1/4 cup cognac and dry white wine
1 1/2 tbsp green pepper corns
1 3/4 cup heavy cream

Heat oil in a skillet. Brown chops, about 3 minutes per side; set aside. Add butter to pan. Cook shallots and mushrooms for another 5 minutes. Season with salt and pepper; add cognac and wine. Cook another 4 minutes; stir over high heat.

Mix peppercorns and cream in a separate bowl. Crush peppercorns into cream. Pour mixture over mushrooms and shallots. Simmer 1-2 minutes, stirring occasionally. Place chops in baking pan and pour mushroom sauce over all. Cover and bake at 350 for 20 minutes.
