BAKED PORK CHOPS AND RICE

3 tbsp oil
6 lean pork chops
1 1/2 cups raw rice
salt and pepper, to taste
6 large onion slices
6 lemon slices
6 tbsp chili sauce
3 cups tomato juice
1/2 tsp Tabasco sauce

In a Dutch oven, heat the oil; add the chops and brown on both sides. Remove the chops from the pan and drain off all the fat.

Stir in the raw rice, coating all grains with fat. Arrange the chops o top and sprinkle with salt and pepper. Place onions, lemon slices and a spoonful of chili sauce on each chop. Add tomato juice and Tabasco, cover loosely and bake until they are tender, about 1 hour at 325.
