BAKED PORK CHOPS

6 center-cut pork chops, about 1/2 inch thick
1 egg white
1 cup evaporated milk
3/4 cup cornflake crumbs
1/4 cup fine dry bread crumbs
2 tbsp Cajun seasoning
1/2 tsp salt

Beat egg whites with milk. Place chops in milk mixture and let stand for 5 minutes, turning chops once.

Meanwhile, combine next 4 ingredients in a shallow dish. Drain chops and coat with crumb mixture. Place in a greased 13x9 inch baking dish and bake at 375 for 20 minutes. Turn chops; bake 15 minutes longer or until no pink remains.
