CHICKEN ZINGARELLA - Easy
Category: Pasta - Chicken
4 boneless, skinless chicken breasts, sprinkled with Italian seasoning, salt and pepper
1 (28 oz jar garden style pasta sauce
1 (16 oz) jar oil-packed, roasted Italian peppers
6-8 large mushrooms, sliced
1 medium onion, chopped
3 clove garlic, minced
2 tbsp packed brown sugar
1/4 cup each red wine and olive oil
1 (16 oz) pkg spaghetti or linguini, cooked al dente, drained
While pasta is cooking, in a skillet, heat oil and saute mushrooms, onions and garlic until tender. Add chicken and cook until no longer pink. Stir in pasta sauce, wine and brown sugar. Simmer for 15 minutes. Add drained and sliced roasted red peppers and simmer for 5 minutes. Serve over drained pasta. Serves 4
