TENDERLOIN IN RED WINE SAUCE

2 lb beef tenderloin, trimmed
Pepper
2 tbsp each soy sauce and olive oil
2 clove garlic, minced
3 chopped shallots
1/3 cup red wine
2 tbsp Dijon mustard
1 cup beef broth
1/4 cup heavy cream
Pour soy sauce over tenderloin and rub with black pepper; marinate at least 30 minutes.
Heat olive oil in a skillet and brown tenderloin on all sides in an oven-proof skillet. Bake at 450 for 50 minutes, turning once. Transfer to a cutting board and let rest while preparing sauce.
Sauce: Pour off any fat from skillet. Place over medium heat on stove and add garlic and shallots. Saute until golden. Add remaining ingredients and allow to simmer for 8 minutes to thicken and reduce. Slice meat and serve with sauce. Serves 6-8
