CRAB CAKES

1 lb lump jumbo crabmeat, picked over
1 tbsp fine cracker meal
1/4 cup finely diced red bell pepper, green onion stems and celery
1 tbsp finely minced garlic
1 egg
1 tsp dry mustard
1 tbsp Old Bay seafood seasoning
Dash white pepper, Worcestershire sauce and Tabasco
Juice of 1 lemon
1/4 cup mayonnaise

Mix ingredients and seasonings together in a bowl, except crab and cracker meal, mixing those together in a separate bowl. Gently fold in crab and cracker meal. Using an ice cream scooper, scoop out mixture onto baking sheet. Set oven to broil and broil the cakes until lightly browned, approximately 4-6 minutes. Watch carefully so they don’t burn. Serves 4
