CAJUN SHRIMP II

4 lbs jumbo, peeled with tails left on and deveined
3 bunches green onions, chopped
2 bunches fresh parsley, chopped
1 bunch celery, chopped
6 lemons, sliced; put aside
2 tbsp Cajun seasoning
Pepper and granulated garlic
Olive oil and butter
Hard crust French bread
Preheat oven to 350. Rinse shrimp; place in a baking dish curve to curve in one layer. Saute vegetables in a little butter with seasonings until vegetables are clear. Remove from heat and spoon over shrimp. Sprinkle with a lot of pepper, garlic and Cajun seasoning. Pour 1/2 cup olive oil over shrimp and place 1/4 cup butter in center; cover shrimp with sliced lemon and bake for 20 minutes. Serve with bread on the side.
