TORTELLINI SHRIMP SALAD

1 (9 oz) pkg cheese tortellini, cooked
1 small zucchini, sliced
1 cup quartered cherry tomatoes and cooked broccoli florets
1 can artichoke hearts, drained and quartered
1 can sliced ripe olives, drained
6 oz Colby-Jack cheese, cubed
1/2 cup Italian salad dressing
Parmesan cheese, to taste
1 lb fresh shrimp, cooked, peeled and deveined

Combine ingredients and toss with dressing. Sprinkle with additional parmesan cheese if desired. Serves 4
